1 large sweet onion, chopped
½ teaspoon ground ginger
½ teaspoon ground black pepper
½ teaspoon ground turmeric
1 can low sodium tomato soup
3 cups water
1 cup lentils, rinsed (remove any foreign pieces, like stones)
1 can (15.5 ounces) chickpeas, rinsed and drained
1 can (14.5 ounces) diced tomatoes
6 tablespoons peanuts, chopped
