A zesty thirst-quencher that’s dairy-free and vegan

This recipe offers a zesty blend of mango, coconut, lime and strawberries. What’s more, it provides your minimum daily serving of vegetables! Dairy-free, gluten-free and vegan, the smoothie is high in potassium, which helps control blood pressure, and features beneficial phytonutrients that help reduce cancer risk.

Ingredients

  • 3 cups baby spinach
  • 1 cup frozen mango
  • 1 cup strawberries
  • 3/4 cup unsweetened coconut almond milk
  • A squeeze of lime juice

Directions

  1. Add spinach, mango, strawberries, coconut almond milk and lime juice to food processor.
  2. Blend until smooth.

  • Spinach: This leafy green probably wasn’t on your radar as a smoothie ingredient, but adding spinach is a great way to get some iron and beta-carotene, an antioxidant that fights inflammation and helps protect your vision.
  • Mango: A delicious tropical treat, mangoes are a good source of vitamins and minerals, like potassium and vitamin C. And did you know that two kinds of fiber contribute to a happy, healthy gut? Well, mangoes have both!
