Recipe: Sweet, Creamy Millet Porridge

An oatmeal alternative the whole family can enjoy

millet and strawberries

Are you stuck in a rut eating oatmeal for breakfast? This naturally sweet, satisfying alternative is sure to become a family favorite. Millet is high in heart-healthy magnesium and full of other minerals. And the tasty toppings provide protein, healthy fats, vitamins, minerals and plenty of phytonutrients.

Ingredients

½ cup hulled millet
3 cups water
1 teaspoon pure vanilla extract
¼ cup sliced almonds
½ fresh strawberries, sliced
½ cup fresh blueberries
Pinch of ground cinnamon

Directions

  1. Put millet in a fine strainer, and rinse. In a medium saucepan, stir together millet, water and vanilla over a medium-high heat. Bring to a boil, then reduce heat to medium-low and simmer, stirring occasionally, until millet is very tender and creamy, 1 hour 15 minutes to 1 hour 30 minutes. (Add more water if you want the porridge a little thinner.)
  2. In a small skillet, toast the almonds over medium heat, stirring often, until golden brown, 3 to 5 minutes.
  3. Divide the porridge among four bowls. Top with strawberries, blueberries, almonds and cinnamon.
