Recipe: Chia Guacamole

An unexpected (but delicious) combination

Recipe Chia Guacamole

You may have never thought to throw some chia seeds in your guac. But this guacamole truly packs a super healthy punch with the addition of nature’s true superfood. These ancient little wonders are packed with fiber, protein, omega-3 fatty acids and antioxidants. So the next time your family and friends are gathering at your house, set out some cut veggies or 100% whole-grain bread to enjoy with this tasty, festive dip.

Ingredients

1 1/2 cups Roma tomatoes, diced with juice
1 teaspoon chia seeds
1 teaspoon jalapeno, charred, peeled, seeded and finely minced (optional)
3 avocados, peeled, pitted and mashed
1 teaspoon fresh garlic, finely minced
1 teaspoon kosher salt
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh lime juice

Directions

  1. In a bowl, combine chia seed, diced tomato and juice. Set aside for 10 minutes, allowing the chia seed to swell.
  2. In another bowl, add remaining ingredients together and mix well.
  3. Let this mixture set for 10 minutes, then add tomato chia mixture. Serve with raw veggies.
