Recipe: Carrot, Raisin and Yogurt Slaw

A sweet, crunchy and refreshing alternative to cabbage

Coleslaw uses cabbage as the main ingredient, but isn’t about time we play around with this traditional side dish? This sweet and crunchy version uses carrots instead, and features creamy Greek yogurt as a dressing rather than mayonnaise.

Ingredients

4 carrots, shredded
1 small bunch cilantro, chopped
1 cup low-fat Greek-style yogurt
1/4 cup golden raisins
1 garlic clove, minced
1 teaspoon lemon juice
Dash of Worcestershire sauce
Salt and freshly ground black pepper (optional)

Directions

  1. Combine all ingredients except salt and pepper in a bowl; mix well.
  2. Season to taste with salt and pepper if desired.
